During the 1947 Burgundy harvest, Gabriel d’Ardhuy met his future wife Eliane, daughter of a local grower. His passion for the vineyards and wine would be the start of a beautiful adventure in two regions close to his heart: Burgundy and the Rhône Valley. Today two of his seven daughters continue with the third generation of their family tradition, making classic wines of Burgundy.
The vineyards at Domaine d’Ardhuy are managed to protect the terroir of the soil and climate. Each vineyard is assessed individually to determine management practices. The philosophy of vineyard management is designed to minimise impact to grapes and wine. The vineyard is run under the ‘lute raisonee’ technique, meaning minimal chemicals therefore pesticides, herbicides and fertilisers are avoided wherever possible. Composting is used to nourish vineyards, ensuring a balanced and complete nutrition. The wines at Domaine d’Ardhuy are processed with similar minimalist philosophies. All grapes are hand harvested, ensuring the highest quality grapes brought into the cellar and damage is kept to a minimum. Destemming is used on all batches, with only 10%-15% left with stems in some red wines. No cold soaking is practised, nor enzymes added for maceration. The cap is gently plunged “pigeages” multiple times per day. Alcoholic fermentation is usually managed for 12-14 days.
